Nocturnal harvesting
The grapes are harvested at night to preserve the grape’s freshness and aromatic intensity. The temperature is strictly controlled throughout the winemaking process in order to maintain the integrity of the Verdejo grape. The variety produces one of the most distinct and well respected white wines in Spain. Its intense aromatic character and balanced acidity make it ideal for our Quinto Pino.
ADVANTAGES OF NIGHT HARVESTING
The grape skin is less sensitive, and reduces fermentative decontrol.
The grapes are rehydrated at night, which reduces the future volume of alcohol in the wine.
The temperature of the grapes is much lower when they arrive at the winery, and it is not necessary to refrigerate as much. Therefore, energy is saved.

Verdejo
Verdejo is found in small clusters, with rather small berries, that maintain a yellowish-green skin as well as green pulp, with enough transparency that the pips can be seen when put up to light. The variety adapts well to poor, stony soils and its origin is attributed to a cross between the Castellana blanca and Traminer varieties (also known as Savagnin). It is thought to have been brought to Spain from Northern Africa.

Vinification
The fermentation is stopped naturally with the residual sugar necessary for giving this wine the unique characteristics of: freshness, flavour and aroma.
